Recipe: Mini No-Bake Pumpkin Cheesecake

Confession: I am obsessed with EVERYTHING mini. Particularly when it comes to food. I’m not quite sure why, but in my opinion bite-sized treats always taste better. From entrées (like mini burgers) to desserts (like mini mason jar apple pies) — there’s just something so darn cute and delicious about them! So – needless to say – I get really REALLY excited when I find a new, mini recipe. Especially when the words “no-bake” and “cheesecake” are also involved. I mean, who could resist these little guys?!

Mini No-Bake Pumpkin Cheesecake

Just the right ratio of graham crust, pumpkin, cream cheese and whipped cream. The perfect dessert when you’re entertaining guests OR if you want to prep sweet treats for the week — just screw the lids on the mason jars and store in your fridge. Best part? They take approximately 15 minutes to make, there’s no baking involved AND they only require eight ingredients (I grabbed all of mine at Walmart)…

Mini No-Bake Pumpkin Cheesecake

Mini No-Bake Pumpkin Cheesecake Recipe

Serving Size: 8

Ingredients

  • 3/4 cup graham cracker crumbs
  • 2 tbsp melted butter
  • 4 oz cream cheese at room temperature
  • 1/4 cup granulated sugar
  • 1/4 cup pure pumpkin purée (from a can or fresh)
  • 1/4 tsp pumpkin pie spice
  • 1/2 cup whipping cream
  • Mini chocolate chips/chocolate to shave on top (optional)

Directions

  • Combine graham cracker crumbs with melted butter and stir well. Divide between 8 125 ml mini mason jars. Use a small spoon or your fingers to press the mixture into an even layer. Chill.
  • Beat cream cheese with sugar in a medium bowl using an electric mixer until smooth and fluffy (1 to 2 min). Beat in pumpkin purée and spice.
  • Whip cream in a separate bowl until it forms stiff peaks (1 to 2 min). I substituted Cool Whip from Walmart to save some time.
  • Fold whipped cream into cream cheese mixture and spoon over prepared bases. I made two batches and liked the one without whipped cream in the mixture more (had a stronger pumpkin flavour). Try both and see what you prefer!
  • Top with chocolate chips. I topped some of mine with pumpkin seeds and others with shaved chocolate instead.
  • Chill until firm (approx. 3 hours). Serve chilled.
