Is it me or do weekday mornings always feel rushed? My kitchen feels like a revolving restaurant from the moment I wake up and it doesn’t stop until we go to bed. Don’t get me wrong. It warms my heart that my kids love to eat, but my friends were right in telling me that they seem to always be looking for food. Since we’re all moving at warp-speed during the morning rush, our breakfast needs to be yummy, fast and filling. I’m always thinking about satisfying options that give me, and the family, enough energy to get through the day…

With the help of the younger one who loves being in the kitchen, we’ve been able to experiment with different recipes. There’s just something satisfying for kids when they know they’ve contributed, am I right?! Recently, the little hands helped me with a super quick and wholesome breakfast option: Quaker Overnight Oats.

The Quaker brand has been a trusted go-to for over 100 years – they are a pantry staple for so many recipes and can now be used for overnight oats! We saw a few overnight oats recipes popping up and decided to give them a try. With only a few minutes of prep the night before, we were able to create healthy and flavourful DIY jars topped with our favourite fruits. The kids loved creating their own jars, freestyle. They were super easy to make and in the morning everyone had their own breakfast in a jar! Which meant I had a few extra minutes to just breathe and get myself presentable for the day ahead (no subway rides with spilled coffee on my shirt).

While experimenting with the different fruit combinations (and you really can’t go wrong), we really enjoyed this Tropical Coconut Overnight Oats recipe made with the flavours we love from our favourite sunny getaways:

TROPICAL COCONUT OVERNIGHT OATS

Tropical Overnight Oats Recipe, Quaker Oats

Makes One Serving

Ingredients
1 cup Quaker Large Flake Oats
1 small ripe banana, mashed
1 cup plain Greek yogurt
1 tbsp honey
1 tbsp chia seeds
Pinch of fine sea salt, optional
3 tbsp unsweetened coconut flakes, divided (2 tbsp + topping)
1/3 cup chopped fresh mango, divided (1/4 cup + topping)
1/3 cup chopped fresh pineapple, divided (1/4 cup + topping)

Directions

1. In a mason jar or bowl, add Quaker Oats, mashed banana, Greek yogurt, honey, chia seeds and sea salt. Stir to combine.

2. Stir in 2 tbsp coconut flakes, ¼ cup mango and ¼ cup pineapple. Top with remaining mango, pineapple and finish with remaining coconut.

3. Cover and refrigerate overnight.

* Thin with unsweetened almond milk if desired

Overnight Oats Tips:

  • If you like your oats creamier, try a smaller grain like Quaker Quick Oats. I used the larger flakes for more texture.
  • You can substitute honey for agave syrup or maple syrup.
  • Don’t like yogurt? Try the recipe with almond milk or low fat milk. I’ve found that ¾ cup is a good measurement of liquid substitution. Also delicious with vanilla yogurt!
